DIY rear brake install gone wrong V70-XC70 2000

My father and I replaced the rear pads and rotors on my 2000 V70 XC today. Used Napa parts. Installation went fine but upon the test drive, terrible grinding noise came from both rear brakes. Took tires off again and the the front pad isn't touching the rotor, the casing that holds the pad is. We can't figure out why there is no space between the casing and the rotor. When we hand tighten the bolts to keep the casing on, there is space but as soon as we tighten it up appropriately, the casing is right up again the rotor. Need advice ASAP please!
