Normal Operating Motor Oil Temperature

Just installed my newest toy - an oil temperature gauge. It's even in Fahrenheit!

I was wondering what the normal operating temperature for motor oil is? I'm assuming it's around 210 degrees since this is the mid-point of the gauge.
