There's no need to think about trying to use an O2 sensor to do that on older cars, it'd be a complete waste of time as they're made to be used with their integrated ECUs (fuel systems), not as an isolated tuning device. If anything you'ld be best off by having the CO/HC checked and adjusted by a shop with a 5 gas anylizer but that's usually unnecessary with carbs IMO.
Do you know how to adjust the carbs "normally"? Old carbs are very easy to adjust, no special tools required other than a unisync for syncronizing multiple carb setups.
