If your old trim isn't in bad shape, it isn't likely to break, but certainly the rubber part of it has shrunk, curled, hardened, and become no longer available, so that alone is a good reason to ditch it if you don't think the entire character of the '82 will have changed with the elimination of the bright surround. Maybe your '82 isn't so bright. Our '83 was much less bright, and of course the turbos are black.
Tom's well-publicized experience with a 91+ glass (presumably an FW667) not covering what the original trim covered does not jibe with my experience. Yes, I've read the stories about the varied widths of the rubber surround, and some about the method of joining the ends of those added to glass purchased without them. Surely on the field, that extra ring of paint would be points off, so getting a wide surround sounds like a good plan. It will be fresh and pliable. And of course, all the myths about the trim being important for water seal are just that -- myth.
No reason I can think of not to go with butyl. The auto glass industry won't support you, having been convinced across the board it is a no-no, as modern cars count on the urethane bond for structural safety. Both methods are "flush mount" as opposed to embedded seal like your rear quarters. Butyl gives you the advantage of being able to control the squeeze-out and height over a much longer time than urethane.
The FW667 has the UV frit whereas the FW404 doesn't. This would block your view of the squeeze-out, as I'm guessing the all-rubber trim may as well. The frit obviates the need to paint the inside edge with blocking primer when curing the urethane.
Trim details? Thought I'd done a fair job describing, but I left out mention of the bottom rubber piece separating the dash itself from the pinchweld. This has an adhesive backing which will have crumbled. You might want to use a double-sided tape, but I did not, leaving it to the compression of the dash against the body to keep it in place. Mine might shrink inward as a result. Will have to look in a couple years to see. Meanwhile check out Redwood Chair's project page if you haven't seen it lately.
The side trim just covers the A-pillars. Take a look at yours, then ask. If you've ever run a wire up there for an accessory, you're familiar with that and the retention of the headliner across the top. Sunroof cars are slightly different, and I've long forgotten how the headliner met the top trim in the wagon I did 7 years ago. I took out the visors and rear view mirror too, but not strictly necessary.
