I think a resistance reading would be relevant ONLY on the Titania-based sensor used with Bendix/Regina FI system (700/900 series). But you bring up a good point, since we don't know which FI system Shifted has on his 700. But I don't think the 700 used Regina FI till 1989.
The more common Zirconia (Bosch FI) sensor must produce a nominal 1.0 volt as a max output to be considered useable. I don't know of any way to use resistance values to judge a zirconia sensor's condition.
