Good sumary of the process. I am a going to try some experiments with electrolysis myself.
I have read in many other locations that stainless is not a good choice for the positive electrode or anode. The reason for this is that as the electrolysis process pulls the iron ions from the stainless, chromate compuunds are generated as a byproduct. Thus your waste electrolyte becomes a toxic substance - remember the story of Erin Brockovitch!
I would stick with regular steel for the anode. I am not a card carrying tree-hugger and don't mean to be preachy, but we only have one environment. Maybe I am sensitive to this issue since my home state, Missouri seems to be the defacto Meth Lab Capitol of the universe. Lord knows these amature chemists don't give a damn about anything and they generate more than a bit of toxic waste.
