temp guage jumpy

Based on my experience (1990 740GL)and from what I have read the 740 temperature gauge is commonly problematic because of a bad ground. When your gauge drops to zero smack the dash above it and see if it responds. Having said that I can also tell you I was never able to correct the fault with my gauge. I don't think the 740 is like the later 240 series with the seperate compensation board, but I am not sure.
