First thing I'd do is change the thermostat... Go ahead and check it again if you want, but I wouldn't put it back in... New ones are cheap. There really ain't much else to go wrong in the cooling system that might cause it to overheat cold...

It is also possible to wreck a thermostat by overheating it even once..
