If you can get inside your instrument cluster (it pulls out as a module) check the nuts securing the temperature gauge (and the fuel gauge, also). The mounting studs for these gauges also serve as the electrical connections, and they tend to loosen after a zillion potholes.

The next time the gauge reads zero and the engine's hot, lightly tap the dash and see if the gauge jumps up to a normal reading.
