1979 244 fuel problems...need help 200 1979

Are you sure the fuel relay isn't dropping out for some reason, such as a problem on the coil ground side, or losing ignition pulses on the W/R wire to 31b?
(Try reseating the push-on terminals at the Ignition coil, #1 is where the Fuel relay pulses come from.)

"Riddle me this, would it be possible for me to simply make a new wire, run it from fuse #7 (the poles on the back that is), bypass all the wireharness stuff and splice it into the red wire going into pole 30,"

According to wiring diagram, there is no "wireharness stuff" between Fuse 7 and Fuel relay 30 -- just a single, continuous Yellow/Red wire with no junctions or other connections. Exactly what you propose duplicating.
