Radiator temp sensor question 200 1986

I recently installed a new 3 row Nissen radiator that has a temp sensor in the upper PS corner I assume for a cooling fan. This threaded in sensor has 2 prongs coming out of it. If I were to tie in an aux fan to that switch, at what temp would the fan come on? Also, would I be able to override the sensor with a manual switch at the same time if need be?
Thanks for your thoughts and ideas on this.
