Erratic Temp Gauge 700 87

I've owned my '87 760 Turbo for about a year and a half now and and after a few fixes (i.e. AMM, vacuum hoses) but this whole time the dash temp gauge has jumped all over the place. I mean constantly jumping up about the midline then back down to nothing. It's never gone above the midline line but I'm to make a long trip and would like to be able to rely on it. Any ideas? Thermostat? Electrical?
