Going to do the water pump & fan clutch 140-160 1975

Running hot on the highway (or coming off the highway) would make me suspect a coolant flow problem.

Your car is almost 35 years old. I would suspect the radiator is not flowing full unless you know it has been thoroughly cleaned out in recent years. The only proper way to thoroughly clean it is to rod it.
At least flow test the radiator before you start just changing parts.

Remember, these cars did not need a Tropical Fan Clutch when they came from the factory. The factory fan worked fine - so long as the radiator was in good shape.
