Intake and exaust manifold gasket replacement 200 1986

Due to a rough idle that I can't track down (I have done just about everything), I was going to try to replace the intake and exaust gaskets. Can I do this with normal hand tools? Is this a job any weekend mechanic can tackle? Any tips or suggestions?
