Simple Overheating Problem??? 200 1978

My 240 began overheating so I started troubleshooting with the usual suspects...thermostat, hoses, radiator, water pump, etc.... The thing that seemed to fix it was the fan clutch. However, in the course of my troubleshooting, I had removed the thermostat. Now, when I put my themostat back in, it immediately overheats. It runs great without it, but I know that it's not good to run without one. I tested the thermostat and it opens in hot water and I do have the orientation correct. Any ideas???
