want to install a bypass switch for AC

Hey,

I hate to start my cars with the AC on. I also hate to rotate that little AC knob on my '89 245 DL too often. I have seen this once before, but didn't see how it was done:

Can I install a toggle switch in one of the free dash panels (near hazard light switch) to turn AC on/off in order to avoid using that rotation knob. Also, that will allow me to leave that knob in the same position year-round if desired.

Aside from that, does that knob really control the amount of AC delivered? does it adjust the expansion valve setting or something?
