I agree, the warnings against shoving probes into the business end of the connector seem a bit like those to not use anti-seize on plug threads lest you over-torque them.
But to read stuff in-circuit, like the voltage on the ECT, the shell needs to come off the plug. Here's how: Remove the two screws holding the cable clamp and unwind the tape underneath. Loosen the single screw holding the shell to the connector body, then push on its head with the #1 Phillips. You'll see the connector move out of the shell. Either pry the end of it out the rest of the way from the connector side, or push with a pick through the screw hole with the screw removed.
