Manually Rewiring Wiring Question 700

I've decided to manually tackle rewiring my wiring harness in my 740 TD. I had couple of questions for the group:

1. What type of connectors do I need to put on the end of the wires and where do I them?

2. What would be the best way to tackle this, remove the entire harness and replace each wire or replace each wire on the harness in the engine bay?

That's pretty much my questions if any one has any other suggestions that would be greatly appreciated.
