Probably one of the dumber questions. 200 1988

Today while trying to change my brake pads I couldn't push the piston back into the bore on my rear tire, so I tried to relieve the pressure by opening the bleeder screw. I had assumed you just turned the screw and then brake fluid would come out, instead the screw just broke off. I am now going to have to replace the caliper and then I soppose I will have to bleed the line, so I don't have a repeat performance, was it just a briddle screw or am I doing it wrong?
*Bonus question*On the front tire I noticed that on one side my brake pads were very worn down, on the other side of the same disc it had practically no ware, stuck piston? Is there a way to unstick it?
