What causes high combustions temperatures? 200

I have 1986 245 DL that just recently failed the emission test here in Ontario, Canada. It had a very high NOx reading. I realize that my best bet would be to replace the catalytic convertor but I would like to try all other options first.

I have been reading that high engine combustion temperatures cause above average NOx levels. What causes high engine combustion temperatures and is there any truth to this?
