Ready for this one...the air intake box has a foam liner (silencer) in the top of it. As it ages, it deteriorates and peels off, becoming trapped in the mass air sensor...choking the engine. It can also clog the inter-cooler, and/or pass through and enter the engine. If this is the problem, once cleaned out, the engine should run just fine. However, when you give it full throttle and release the pedal, you may hear a lot more air noise (turbulence) from the air box.
I had a 1992 740 turbo...this happened to me. Took me a while to find the problem.
One other possiblity...the large air hose from the air box to the turbo is subjected to a lot of heat (no heat shield on my car) and oil/gases sucked in through from the case. Over time, the rubber turns into goo and will actually collapse when you accelerate, again, choking the engine. The hose is expensive. But it may be repairable. I spread high temp, black RTV silicone on the outside and layered 4 to 5 pieces of aluminum foil over the effected area. This stiffened the hose AND acted as a heat shield.
