Hope you're well. Your mechanic should have inferred from the temp sensor's presence, that it is a required part. Ergo, he should have removed the black plastic plug and replaced it with the temp sensor.
Get a replacement rubber grommet from a Volvo dealer (#1378869, $4-5 MSRP). With the engine cold, grip the plastic plug with a vise grip pliers. You want to "walk" the plug out of the grommet. To do that, rock the vise grips gently from side-to-side (about 5 degress on either side of a straight line from the plug's center), while pulling backwards (towards the windshield).
When the plug comes out, remove the grommet and - having lubricated the replacement grommet with dishwashing liquid - seat the new grommet in the radiator opening.
Firmly press the temp sensor into the grommet. It will take some effort to do this. Once you've seated the temp sensor, use brass wire to secure the temp sensor. See the FAQs for the procedure. The wire will keep the temp sensor from coming loose.
