I have never seen an 850 cat go bad, but that's just me. The cat you had put on is probably up to snuff, but with Volvo sometimes all bets are off if it isn't the right part. Two ways to check oxygen sensor operation: one is an exhaust gas analyzer which is far more helpful than: two: connecting a volt meter to the black and grey wires coming from/going to your oxygen sensor and measuring the voltage. Should range between .2 and .8 volts, the faster and more uniform the better. Lower voltages indicate a lean mix, higher voltages a rich mix. Good luck.
