Anything is possable.
Yes you could just bolt in a 5spd... but would the engine ever run right? Thats what you need to go research.
Your best bet would be to become friends with an experienced Volvo parts guy and have him research for differences between the auto and manual. As you scroll through and list the differences you'll see the things you'd need to change over. Then you can determine if it's a go/no go. Big differences could be ECU and emissions... and smaller things like misc relays and control units. Make sure to talk to someone who can look everything up and knows their stuff.
On an off note... I learned their are several different part numbers for my cars head: manual, auto, turbo, airpump, egr, etc... each one different in some way. I took an inexpensive out and bought a used one that had an air pump... mine didn't and there is a difference where I now have an exhaust leak at the head. It's not too big a deal and I can fix it... just proves 850's are complicated machines.
The 5spd is great and I couldn't imagine driving an auto. The only down side is that you have to rev them out like a ricer Honda to really move.
