I also live in humid South Florida and get some condensation as you describe it. It can be stopped by switching the air control to recirculate. It is quite normal and, if it annoys you just go to recirculate for a while. It at least shows that your a/c is cooling exremely well.
On your other problem I would check the upper strut mounts and the tension on the mounting bolts, your car is a bit young to have a failure.
