Sounds like an interesting project. I have not done it, but installed an aftermarket head unit that connects to Android Auto (or Apple) and therefore Waze and Goggle Maps. I can see an advantage to having the screen on top of the dash, (HU location, just a tiny bit low) and if you like your factory HU. My question is if the factory nav systems get good reviews? Do you have to update the maps or software? At dealer? (that's what's bad about Garmin) Garmin charges $80 for map updates.
