Removing Oil Galley Plugs 200 1989

My 1980 242 DL has 11 mm bolts on either end of the cylinder head - no problem removing. However, my 1989 has 3/16" Allen bolts (4 mm and 5 mm do not fit) that are stuck, an in fact one allen bolt is nicely stripped. Any tips for removing? My goal is to clean the cylinder head as a part of a head gasket job. I'd really like to flush the oil gallery, but these stuck bolts worry me.
