90 Girling calipers - looking before I leak 700 1990

I've got this Regina 90 740GL and am looking at doing the brakes on it.

The RR wheel is cold, but I started by looking at the LF wheel as my usual procedure. I like to empty the reservoir and replace it with fresh fluid ASAP before moving to the others rather than start with the longest and slowest line.

Anyway, I've never had these calipers in my hands before. Right off the bat, I notice:

The caliper bracket mounts with 10MM female hex keys. Can I replace these with grade 12.1 hex bolts?
There is 1 very long boot over the top slide pin and only 1 exposed retainer bolt on the bottom pin.
There are 2 pistons (oh joy) and 2 bleeders (Joy of joys! At least it isn't 3...)
There is also a small hex cap/plug that looks like it is the top of the bore for the 2 pistons.

For bleeding - can I just bleed the bottom, then the top if I'm dealing with a non-new caliper? The FAQ says to open both, then put paper (what?) over the top bleeder, a tube on the lower bleeder, and then to bleed away. Then close the bottom bleeder and move to the top. I'm certainly not going to "put paper over" any port. I understand wanting to get the air out of the entire caliper before trying to bleed the bottom, but really now.

My bleeder setup works great - a spring-loaded one-way PCV valve from an 03 Hyundai stuck into an antique gatorade bottle. Seriously, I started using that bottle in maybe 2006, then added the valve around 2010.
