Random stalls, both going 55 and slow, wait 5 minutes, then it starts again 200 1993

We have a 1993 240 that randomly stalls - we can be going 60 mph on highway or stop and go in town - it stalls suddenly, if we wait 5 minutes it will start right up again - but not until 5-7 minutes passes. Repair garage can't get it to stall or act up in any way - we suspect some kind of fuel related issue - they unplugged something (I'm a single mom so I don't know many parts names - sorry) that the mechanic said would require that you turn the key off in an accident otherwise gas would keep flowing? and is telling me to come pick up the car but he can't guarantee that the stalling won't continue - so basically he by-passed whatever that was - does this seem realistic to anyone? He is also charging me $250 - and it sounds like he didn't do anything but unplug a wire!!!! He also said, if it does keep stalling we would need a new fuel-related computer (sorry, no name) - and they are $1600!!!!!!!!!!! I bought this car for my 16 year old son and no way can I afford $1600 for a new fuel computer. What do you guys recommend?
so - the only problem the car currently has is the random stalling, wait 5-7 minutes and start up again, sometimes it goes for a week with no problems, other times it stalls 3 times within 5 miles of driving. Help! Please! My son loves this car but I can't afford to get it fixed every month.
