Just one thing to add Philip`s post make sure you get the mounting screws for the manual crank I think they are shorter than the ones for the electric motor.

Welcome to the forum. Looks like you got your answer, I'm converting mine also. Just FYI, at the top of the page, under the ad window there's a "FEATURES" pull down menu. The last option is 700/900 FAQ. There is an unbelievable amount of information there for these cars, indexed by subject.

I had an older 740 and there was a flat "T" shaped tool in the glove box and instructions in the owners manual on how to close the sunroof manually. Unfortunately, the car and tool are long gone.

Remove the cover. You will see a large slotted screw, possibly with a ball bearing in the middle of it. Use a screwdriver to depress the bearing and turn the screw to manually operate the roof. Salvage a manual cover and crank, remove the power motor, tape up the wires, and swap the manual for the power parts. It is very easy. Best to do it with the roof fully and properly closed so you get the gear and crank position located conveniently.
