Would any of you good folks know how much distance there is between the spark plug electrode and the top of the piston when the piston is at the bottom of its stroke, with the head still on the engine?

I want to make sure I don't cut the piston when threading the plug hole for an insert.

"Stroke" it's called, I found it, 80mm

you're missing the obvious.

use the harmonic balancer to lower each piston in turn before you do your threading
