Idling & Carbureator issue 120-130 1967

I recently had my old reliable 122 serviced for a number of repairs. During the course of working on the manual choke, the mechanic discovered significant sludge, varnish, and gunk on the dual carburetor linkages. He performed some much needed cleaning. He also cleaned and adjusted the jets. When I picked up the car it was already warmed up and started right up.
The next day when i attempted to start the car, I had to really have the gas pedal depressed to keep engine running. I had to have the choke control pulled completely out of the dash. In addition, a significant gas odor could be detected in the garage. The minute I tried to press in the choke, the engine wanted to die. I have not yet spoken with the mechanic. This is not the way the choke and engine started previously.
I suspect he will say this is the way it should be. BUT I don't think it is. Would anyone be interested in making a comment / recommendation on this condition ?? Thank you for your consideration on this matter.

    You are correct in that your carbs are not adjusted properly.
    Your car should run on its own without the need to press the gas to keep it running. It should start on full choke and continue on its own as you slowly push in the choke knob.

    Have your guy redo the carbs or take it to someone who knows how to adjust them properly. Or use this as a learning experience and try it yourself.

    There are mighty few people I trust carbs to, especially since Jim Taylor died here in Bartlesville.
    Best bet is to learn how they work and do them yourself.
    Then, at a bare minimum, you KNOW what has been done to them, and when you can't find good
    help, you can do it yourself.

    Good man! It is hard to find a mechanic that knows enough about carbs to remove and clean the jets. Sounds like he didn't tighten down the jets enough and now your are pouring gas through the carb at a tremendous rate. Jetting carbs is not science, but an art that is realized over many years of trial and error.
