I don't trust the stability of the stock Amazon jack especially on uneven ground. Have any of you found a good alternate/substitute jack?

punning aside, actually I use a floor jack for everything except flats. And I've not yet had one in an amazon.

You can use a bottle jack under the axle or the outboard part of the lower A-frame.
For what it is the 122 jack is pretty good unless the mount is loose.
I had a 164 jack strip its screw thread once, similar design but slightly different
mounting to the body.
