Overheating S80

Is there an overheating problem or stuck thermostats? I have an '03 S80 T6 and a month ago the temp gague went hot then cooled down, like a stuck thermostat. Car has 28k miles. Did Not happen again. I checked the coolant it has always been full. This past weekend the car overheated with steam coming out, (it was driven for 10 mins). I wasn't driving it so I can' tell if the gague went high (I'm sure it did). The mechanic said that there was no water in it, but I know there was. It has to be a stuck thermostat or something else...
