Really inaccurate gas gauge in S 80 5cyl 2005

What I thought was a dirty fuel issue is actually me running out of gas. I put five gallons in an empty tank and suddenly the gauge reads almost 2/3 full and the distance to empty meter says I can go 280 or 56 miles per gallon. is there a way to adjust the sending unit? The first owner had the gauge replaced because it stopped working. How does one put a new fuel level gauge in ? I saw a homemade car with a gauge hooked up but I thought the gauge would be designed around the tank shape and size. Any ideas?
