disappearing coolant 850

1994 w/242,000 miles on odomenter.

The coolant keeps disppearing way too fast. My mechanic says he can't see a leak and to watch it. I am now riding around with a gallon of water to be on the safe side. Meanwhile, a friend suggested my wate pump may be on the way out. I replaced radiator in January and fuel pump about 2 weeks ago.

Any idea what could be happening? I am tryng to hold on to this car for another year or 250,000.
