98 V70 Shows hot but is not V70-XC70 1998

Good morning! This is the ongoing saga of the V70 diagnosed with a blown head gasket by a local shop because it was losing coolant. Since have found 2 small leaks in radiator. New radiator fixed coolant loss. However, periodically the temp gauge swings upward to the red zone. If I pull over and shut off the car for say 30 seconds, then crank back up, the gauge drops back down to normal. When the temp gauge does go into the red zone, the engine does not seem hot at all...no smells, leaks, anything. Any ideas? Could I have a radiator fan that is intermittent or some kind of weird temp sensor or thermostat problem. I am lost here. Thanks in advance for your help!
