If you hold the throttle down about half way in sport mode
you will see it holds the gear longer. In econ it shifts
sooner. So, you should get better mileage in econ (but I
have never tried to measure it) and a more "sporty"
    acceleration feel in "sport".

    We keep ours in sport.

When you floor it the shift points are the same regardless
    of the "mode".

I cannot find any difference in fuel consumption between economy and sport mode. Some of the contributors to this website told me that the changes are crisper in the sport mode and of course take place higher in the rpm range than in economy. The manual states that econ. mode should be used when the cruise control is engaged. I run my 850R in the sport mode most of the time around town and in the econ mode on a long trip. The winter setting does not allow the transmission to select 1st or 2nd gear.
