Center headrest in rear seat interferes with child booster seat. Space is not a problem, but would rather seat the little one in the safer, center seat.

Cars are ’95 850 Sedan and/or ’00 V70XC. I’ve tried to pry it out of the 850, even tried pushing it out way too hard, but no luck. Any advice is appreciated.

According to the Volvo blue book for the S-70's, you push down on the upholstery around the bushing collars and pull out pins. Next just lift up on the headrest. From the pic apparently the pins (U shaped) come out from the side. This if for the center, the side ones are similar to the front where you go down the back of the seat and push in. That took me awhile to figure, but it works.

As it turns out, there are a total of three clips. There are two, one through each of the two bushing collars that the head rest rods go into, that are the detents for the adjustment positions. These won't let it come free. It's the third one, another 1/2 inch down on the left side collar, that comes out the side towards the center and releases the headrest.
