If I go up to 16 in wheels form 15, how far will it throw the speedo?

What if I stay with 15's and go up from 195 60 to 205 60?

    S70 Tires and Speedo S70

    Changing the wheel size has no impact on the speedo - just changing the diameter of the tire. Tire diameter is equal to width in mm divided by 25.4 (195/25.4 or 7.677) times aspect ratio times 2 (.60 X 2 or 1.2) plus the diameter of the wheel (15) or 24.21 inches for a 195/60/15. A 205/60/15 is then 24.68 inches in diameter or 1.95% greater than the 195/60/15. So you speedometer will be off by 1.95%. Both your speedometer and odometer will be understated by that amount. With the right 16 inch tire size you should be able to come very close to the original diameter.
