The wires carry the same voltage change as the serial signals are carried. One wire 4V down to 2.5V as the other wire simultaneously goes from 1V up to 2.5 V.
This will result in no net current change in the pair. This keeps the other wires nearby from getting any RFI from the CAN wires and also reduces any induced RFI in the CAN wires.
